Thanks to my neighbor for giving me the arugula.
Spaghetti Arugula.
Steve brought home the olives and fresh pasta. A recipe from the excellent chef Anna Flevola formerly of La Cucina Flegrea. Garlic, olive oil, a bit of red onion, pine nuts, walnuts, raisins, red pepper flakes and a ladle of pasta water -topped with the rocket/arugula and freshly grated Parmesan.
Ready to serve
This should be photo four but having WP posting issue w photos tonight
Looks yummy!
Yes Rainee. Thanks
Healthy and easy. I like the look of that Ruth. Not keen on walnuts so might have to substitute. Almonds maybe? X
I’ve made it with just pine nuts. Skip the walnuts. Not sure about almonds.
Very Susan friendly – yum
For many years, this was my favorite dish at Anna’s place. Now you have to post her Rigatoni Alla Vodka. Yum. Her food was so delicious. There was none better.
Looks fantastic!! There is some arugula in our fridge – I love it! This is such a creative recipe. I made mushroom, barley, bean soup last night – have enough for a couple of days.
Your soup sounds delicious. Thanks for leaving a comment today.
Delicious – all favourite ingredients in one enticing combo.
Be sure to send s pic if you make it
You’re on 🙂
Now I am hungry. Great series of photos.
Thanks Cee. And it’s vegan (I’m not, but a great dish to make for friends who are)
Looks delicious Ruth, my kind of food. I didn’t know rocket was also called arugula. Didn’t that many olives make it a bit salty?
It is salty, savory and a hint of sweet with raisins and the hot pepper flakes confound the tastebuds. We like it but I guess you could cut down on olives
Yum!
Bless the person that taught you this dish, Ruth. I cannot wait to try it. Thanks!
