Spaghetti Arugula

Thanks to my neighbor for giving me the arugula.

Spaghetti Arugula.

Steve brought home the olives and fresh pasta. A recipe from the excellent chef Anna Flevola formerly of La Cucina Flegrea. Garlic, olive oil, a bit of red onion, pine nuts, walnuts, raisins, red pepper flakes and a ladle of pasta water -topped with the rocket/arugula and freshly grated Parmesan.

  1. For many years, this was my favorite dish at Anna’s place. Now you have to post her Rigatoni Alla Vodka. Yum. Her food was so delicious. There was none better.

  2. Looks fantastic!! There is some arugula in our fridge – I love it! This is such a creative recipe. I made mushroom, barley, bean soup last night – have enough for a couple of days.

    • It is salty, savory and a hint of sweet with raisins and the hot pepper flakes confound the tastebuds. We like it but I guess you could cut down on olives

Thanks for your visit. It's always good to hear you stopped by.
