My Answer to 9 Degrees Temperature? Homemade French Onion Soup

A bowl of onions on the kitchen table has been talking to me saying “Onion rings in the cast iron skillet, onion rings in the cast iron skillet.” But I came to my senses and sliced them up and sauteed them in butter and olive oil to carmelize them.  Toasted a slice of Allegro Hearth Farmgrain Bread and thin parings of Parmesan. Ladled the hot broth over the toast and cheese. Used my Grandmother Hendricks’ silver soup spoon with just the right bowl of a spoon for the soup.     Minestrone, mushroom bisque.
    Wedding and chicken noodle.
    Cream of Tomato with a grilled cheese
    or shredded cheddar in the bowl/
    melts in strings.
    Saltines on the side.
    The comfort of broth.
    Chop celery, carrots, mince garlic.
    Soak beans. Add spinach.
    But what I had on hand were onions.
    Lots of onions.

  3. I’ve made lots of hamburger soup and lentil soup this winter. Store it in the quart size canning jars which look lovely lined up in the refrigerator. Yesterday made Chris tomato soup with grilled cheese sandwich — that’s the best combo ever. Well, so is chicken noodle soup with a peanut butter sandwich.

  5. I haven’t made French Onion Soup for over 30 years. I really like it the way its made at Panera Bread, plus you get the good bread along with it! Good winter food!!

  6. I love making all different kinds of soup, but never tried French Onion! Now I might have too, that looks so good!
