Mary has a cookie recipe that calls for crystallized ginger. Can’t buy the small crystallized ginger any more. Apparently manufactures stopped making the small ones. The large ones are more “gummy” and we cut them up but don’t provide the little crunch surprise when biting into the cookies. Love ginger in any form.
Hope the King Arthur and Penzeys ginger products are the right ones.
