Arugula Microgreens Grown by the Lettuce Ladies

Grown hydroponically by the Lettuce Ladies Ambridge PA.

I used arugula microgreens for the first time in the Spaghetti Arugula dish I learned how to make when I took a cooking class at La Cucina Flegrea taught by chef Anna Fevola. (Click to see links)

The micro greens are fragrant. Delicate but flavorful. Delicious! Have you tried microgreens?

Added some freshly grated Parmesan on top

I put the micro greens on top of the spaghetti arugula mixture at the end. Don’t cook the micro greens for this dish. Just toss the arugula throughout your portion!

Here’s the refreshing dish once again, from last night.

Summer Squash Sauce, Arugula and Parmesan

A couple of yellow squash and a zucchini sautéed in olive oil with onion and garlic- sprinkled with fresh Parmesan on top of a bed of arugula and pasta.  Olives, sliced tomatoes with fresh mozzarella on the side .

Thanks to my neighbor for giving me the arugula.

Steve brought home the olives and fresh pasta. A recipe from the excellent chef Anna Flevola formerly of La Cucina Flegrea. Garlic, olive oil, a bit of red onion, pine nuts, walnuts, raisins, red pepper flakes and a ladle of pasta water -topped with the rocket/arugula and freshly grated Parmesan.
