These were given to me a few weeks ago.

I let them dry out. Pretty soon, with the change of weather, it’s going to be chili season. A big pot on the stove’s back burner on a chilly afternoon could be a little spicier this year. I have a jar of dried red Chile peppers I use to add some zip to dishes. Sometimes they can make your lips sing.

Red hot pepper was what we used to call out when cranking a jump rope, speeding it up, seeing how many jumps you could do at a rapid pace.

This French pepper mill was a 1974 wedding gift from my sister’s friend, Janet. It works perfectly. I added a variety of peppercorns my friend Joanne sent to me.

Pick a Peck of Purple Peppers

Pick a peck of purple peppers. James is growing these in a pot, out front on the steps. Don’t think there will enough for a peck, though. They are such a beautiful color. Not sure about their heat factor either. I’d never seen purple peppers before.

When Your Neighbor Brings You Pancetta

When your neighbor brings you pounds of pancetta, what else can you do? (Thank you Joaquin.)

I read some eat pancetta raw but that turned me.

Next time I’ll slice it more thinly. First, I warmed the dish in the oven, cooked the cut up pancetta for about 8 minutes in my cast iron skillet and then drained it on paper towels. Tossed  the eggs, cheese, minced garlic cloves mixture  onto the hot drained spaghetti  in the warmed casserole   Freshly ground pepper. Rich and good. Next time I’ll hold off on salting the pasta water as the pancetta and cheese made it salty enough.  The recipe called for 1/2 cup white wine which I didn’t have on hand so poured a glass of red to accompany this perfect dish for a snowy day.

Spaghetti Carbonara
