There’s a variety of items on either side of the check out line at TJMaxx store. Strategically placed to tempt the shoppers. Impulse buys!

I was purchasing a couple of household items when I spotted these bags of Candy Bar flavored coffee.

I don’t care for flavored coffee or sweet (probably super sugary)coffee but the bags still caught my eye.

Chocolate Cloud Cake

Cloud Cake Recipe -a flourless chocolate cake

It calls for five eggs separated. 3 of the eggs had double yolks so it was extra rich

Good chocolate is key to depth of flavor
I even added a few squares of Icelandic Dark with SeaSalt.
I used the vegetable steamer and a Pyrex bowl as a double boiler to melt the chocolate and butter
Once it’s smooth , let it cool a bit before you fold in the egg whites

Don’t over bake so it isn’t dry
The top did not crack this time we added freshly whipped heavy cream with a bit of vanilla. It’s simply delicious

The Polka Fest in Johnstown PA

It’s the first weekend in June, every year. We drove over Sunday afternoon, about a 90 minute trek from the city. We heard it was packed on Friday and Saturday but we were happy with a modest crowd.

The music energizing and festive. The dancers enjoying themselves as they zipped around the floor in the pavilion. A little rain didn’t dampen the spirit.
